I am trying to reproduce your issue on my side.
I create a new Access table then I move data to SharePoint list.
But when I create an app based on the list, on the gallery I can see all the items in the list(for a test, I add 8 items in the list).
I am not sure with the data source, please show me a screenshot of your data source for better understanding.
About the ClearCollect function, it seems that only 5 items can be shown on the Collection. But when you show the collection data to a Gallery control, you will find that you can get all the data.
Please try it to show the collection data on a Gallery to see if you could get all the data.

Sorry - My original question was maybe not explicit enough - Firstly a brief bit of background !
I have been using Access Web Apps and have to turn to Powerapps as microsoft is closing it down !. I started by adding a connection to the azure database wich was very slow, and then I heard about the Access web apps data being closed soon. So I exported all the data from Web Apps to sharepoint. This has created some problems as some lookup fields do not display in the sharepoint list, but are available for selection in the Power Apps connection !.
I initially exported a table Quoteclient to excel and then imported to CDS. I eventually got this functioning as I wanted so I tested with the azure connection, the gallery worked fine (but with limited functions) and showed all records. The table holds data but also a number of fields that hold IDs for related tables ( the many to many connections mentioned in original message) .
However when connecting to the sharepoint lists, this particular table gallery will only show one record ( Listing left) whilst others work fine. On the left is the gallery from Quotedata list and on the right is a galleryfrom a table with the same Quote numbers
I have a secodary major issue which may or may not be related. I cannot get a collection to give more thn 5 records from any share point list - and sometimes only one.
Using this for the collection ClearCollect(newtest,quoteclient)
my collection is as follows :
Note the quote no 514 - again only one record.
Now if I do a similar clearcollect from the list that holds the data in the right hand gallery above I get
Again only one record, but thistime a different quote number !! When using the original CDS dta connection, clearcollect was not an issue.
I guess there is something in Sharepoint - could it be a permission issue ?
Currently at loggerheads !!
