I am trying to build a flow that does the following:
WHEN a Custom Entity is updated:
IF Custom Entity Field Option Set = "a value"
- Assign Custom Entity to Team in Owner field.
- Email all Team members of assignment.
I need help in understanding how to do these two things. I'm not sure what Actions I should use other than "Mail" and "Update a Record - Common Data Service".
The team members are dynamic, so I don't know the email addresses at flow design time. I have defined the team in the "Environment" -> "Settings" -> "Users + Permission" -> Teams section.
So how do you determine that what team owns the record then? Accordingly, you can do this: When a record is updated, ensure that you provide an attribute filter such that the flow triggers only when that particular field is updated. and then the update record action select the owner type as team and pass the team guid. last action would be to send the email.

I have a Business Rule on the Custom Entity that sets the "Owner" field to the Team. I am able to see the Team GUID. What I don't know is how to get the Team member's emails.
In my Flow Run history I can see the owner fields are set to these values:
You could use the Get user action of Azure AD connector to get the user Email address according to the UID:

I looked for a "Get User" for Azure AD but did not see it. I created a connection for Azure AD and the "Get User" Azure AD action become available. I provided the GUID as the input for the function but the it is unable to find the user.
