Chain expression for oData

I am pretty new to this. I come from a JavaScript background and am used to being able to chain things like String.replace().replace(). 

 

For filtering rows, I thought it would be: (I am trying to replace characters ',' and ' within displayName at the same time)
    replace(replace(items('Apply_to_each')?['displayName'],'''',''''''),' and ',' & ')

 

But this doesn't seem to be working. 

 

Also tried:
    replace(items('Apply_to_each')?['displayName'],'''','''''')&&replace(items('Apply_to_each')?['displayName'],' and ',' & ')


But this wont even accept the expression.
