I'm trying to select the language of my date

the result is : Saturday, December 19, 2020 I would like Samedi 19 décembre 2020

Where can we change the language?

Just to double check, are the Power Automate settings of the account you are using to create the flow set to Français and France.

I found a possible workaround in this thread. Using the translate text option:

Maybe that one is worth a shot?

I don't have a translator subscription, I can't do it.

Finally, I subscribed the day of the week so I use:

formatDateTime(utcNow(), 'dddd dd-MM-yyyy')
