Definitively the condition formulas are pretty enigmatic for me ...
I have a sharepoint list with a choice column named 'Etat' with 3 choices: 'En attente', 'Perdu', 'Retenu'.
I want my Flow to do an action if the choice is on 'Retenu', so I make a Condition 'Etat Value' equal 'Retenu'... I Tried with 'Etat', With "Retenu", Retenu, but it don't work...

Please choose the "Etat Value" dynamic content of the trigger in the first field of the Condition.

According to my testing, it should work if your condition tests the Etat Value equal to Retenu.
If this is not working for you, can you check the outputs of the When an item is created or modified action after you run the Flow on an item where Etat = Retenu? Does the value appear to be correct there? It should look something like this:
