Format quick parts with custom date?

I've been trying to format quick parts with a custom date but don't think this is possible?

 

The date is taken from a SharePoint date column and displayed as "23/02/2021"


How can I get the flow to format the date in this format - "23 February 2021" ?


I've tried putting in "formatDateTime('DateLetterCreated', 'dd/MM/yyyy hh:mm tt')"

This however doesn't work as now the field it tries to update the content of a document with is not a SharePoint field.
Somehow the date field in SharePoint needs to be conditionally formatted in SharePoint first.

It doesn't actually need to be a date field as the data is being imported from Excel on another flow. So can be plain text if that better?

I've tried this however its still displaying in the native format:

I want it to display as [DAY] [Month] [YEAR] with no commas.
Rather than displaying as 24/02/2021.

The formula below should do:

formatDateTime('DateLetterCreated''dd MMMM yyyy')
