How to count the number of records in Dynamics 365/CRM Entity

What I would like to achieve is:

On determined time intervals, I would like to count the number of records in a specific entity, and save this count in an new record in a custom entity. Then later, I can use Power BI to retrieve this Custom Entity records and create a RealTime Chart that lists the changes of record counts on a timeline

It seems that this cannot be done so far.
