I have a list for tasks with the field "Assigned to". It is a "person or group" field that does not allow multiple selections. I have created a flow that, when a task is created, sends an email to the person to whom it has been assigned.
The flow works for some users, but gives the following error for other users: One or more recipients are not valid.

Further, could you please show more details about the run history of the action where the error occurred?
The error message told that there is something wrong with the value that you provided within the To field of the "Send an email" action in your flow. Please check if you have filled a valid value within the To field of the "Send an email" action. Also please check if the value that you provided within the To field of the "Send an email" action is empty.
I have made a test on my side, if the Dynamic content value that you provided within the To field of the "Send an email" action is empty, the error would be shown up as you mentioned. So within your flow, you should firstly check if the Assigned to dynamic content is empty, if yes, do nothing, if no, send email notification.

Within Condition box, click "Edit in advanced mode", type the following formula:
Within "Send an email" action, To field set to Assigned to Email dynamic content of the trigger.
Note: The Assigned to column is a Person or Group type column in my SharePoint list, which does not allow multiple selections.

I have tried your suggestion and, indeed, it seems that "Assigned to" is empty, so the flow works but the emails are not sent. I do not know why it happens, in the list I select "only one person". I send you a picture of the flow and another one from the list where person are selected.

I'm getting the same error with a Flow I built which reads an Excel file containing a list of email addresses. To test the Flow, I created a sample file containing a few rows with my email address. When I test the Flow it fails with the following error:
