I am trying to build a flow that runs a stored procedure "execute stored procedure (V2)" then converts the output of this into a PDF that can then be emailed. any ideas ?

You can refer to the method in this blog to get the data and configure Create HTML table action after Select.
Then use the Create file action to create a doc file with the output of the HTML table as the file content.
Then use the Convert file action to convert the file created above into a PDF file.
Finally, you can configure the Send email action to configure the file name and file content output from the Convert file action in the attachment name and attachment content.
I am not wanting to run through Powerapps ? So far I have

from here i cannot workout how to 'Create file action' to create a doc file for a readable output
