I am currently working on a scheduled flow that needs to restore a document to its certain version when date of validity expires. By using this HTTP request on my flow:
No Errors but nothing happens to the document as well.
RestoreByLabel returns null value

I did a test on my side. After Flow runs successfully, the content returned is the same as yours, and this is what we expected.
This result indicates that the document has been restored to the specified version.
After the Flow runs successfully, you could click on the latest version to compare with the version you want to restore, and the content is the same.

Ok so i got it now. When the document version is restored, it will create a new version on top of the current version and replace it. I checked the content and it is working as expected. That provided solution work perfectly fine.
