Sending e-mail Attachment in sharpoint document

I don’t have any problem to do this but I want to create a field where I can put the sender e-mail 

Is it Possible ?

I tried to use a template but I can’t insert a sender field

Just curious... are you working off an exiting Flow template (i.e. Save email attachments to a SharePoint library and receive a notification) or are you creating it from scratch? May posting a screenshot with what you have may help.

How can I extract the E-mail sender from the e-mail and put that one into Document Library List near the attachment?

You need to add a "Update file properties" action like below.

It will display the available fields of your document library so you can enter the Sender's email from the dynamic contents.
