I have a SharePoint list, and on that list is a field called "Create Checklist" (Yes/No). If Yes, I have the flow creating a few tasks on another list. After it is done creating those tasks, I have it resetting the "Create Checklist" field to No and I now want to set that field as read only so that the user doesn't select it again since the action is already completed. It's got me stumped. Any suggestions?

SharePoint doesn't support permissions at the level of a Field in a list. You can change the permissions on a List Item using HTTP, but there is no way to make a Field Read Only.
I wasn't looking at as permissions. When I used InfoPath, I was able to set a condition on a field to make it read only (or disable it) after it was selected. I was hoping to achieve something similar with Flow.
For that take a look at the DisplayMode property of the control. Most controls have three modes: Edit, View, and Disabled. This is usually handled by an If() in the displaymode property that tests a variable for a specific value. then sets the control to Edit or Disabled based on the value. When you submit your form change the value of the variable and the control will disable after submission.
