I found the following guide that was close to what I was hoping to accomplish:

Here's two examples of how this works in my case:
The first example works great until someone modifies the item again, then the original timestamp is replaced. Is it possible to create a timestamp only when the column is changed from "x" to "y"?

I was able to get the timestamps to work correctly by adding a second condition that is equal to null. This solved my problem.
