Using an array variable to update a Dataverse Row

Hi all,

I'm building a flow that will remove or anonymize bits of data in a table row. Because of the way we want to set it up, the fields to be anonymized/deleted may change over time, so we've got a table with a UI view for the Data Assurance team, where the relevant fields are inserted in comma separated format (like the labelling field here). For filtering purposes, this can be used as a straightforward array. But at the 'Update row' stage, I can't find a way to use the array to identify the fields (and only those fields) to be changed. Is there a different way of doing this? I'm imagining there's a way to edit the record JSON directly, but I'm struggling to think how...
