When trying to peek code and edit, It says I am in "read only editor". How do I change my view so I can edit the JSON?

It depends on what action you are trying to edit.  But the Peek Code option is always Read Only.  For conditions there used to be an advanced view that allowed editing but it has been removed.  You can also specify the JSON of an object using the expressions tab.  But for most actions there is no way to directly edit the JSON of the action.

I am afraid that we could not edit code here, we only can configure parameters in the fields.

We can select expressions here and paste them into the Dynamic Content expression editor. This can also give you a way to verify that exactly the data you expect is present in the flow.
