Basically, it can be done something like this.
Unfortunately, at this moment, there is no way to detect if something is modified just for that particular field.
It is already in feature request list.
But if every modified list, you want to update the value to 'Y', then this flow should work for you.

I've created new list with same values/fields that initial list.
I've created Flow to create item in new list every time that first list is updated manually by user
In new list i have old values & new values, the problem is in calculated fields from first list, the result with flow is empty but the result with SP Designer is the data.
Creating new items, in the new list, by SPDesigner was the solution.
At this moment Flow is good solution but SPDesigner is better in some cases similar to this.
