Date format is messed up all of a sudden!

I have a label defined as....

Text(Last_x0020_Updated,ShortDateTime) & " by " & ThisItem.Last_x0020_Updated_x0020_By

It was working fine but all of a sudden it's not. I'm not sure why. I would like it to show up as....

But, now it's showing up as.....

I even tried this to see if I could manipulate it at all, but it showed the same thing...

Text(ThisItem.Last_x0020_Updated,"[$-en-US]dd/mm/yyyy")

I even opened the data source file in Excel and made sure the columns were formatted correctly...

Format_Cells_and_InventoryTracker_xlsx.jpg

The only thing I believe I changed recently was how "Items" was defined for the gallery...

SortByColumns(
Search(
Filter(
Inventory,
Category=ddlFilterCategories.Selected.Value),
TextSearchBox1.Text,
"Category","Product_x0020_Name"
),
"Product_x0020_Name",
If(SortDescending1, Descending, Ascending)

But I don't think that should matter much.

Any ideas why?

Thanks!
