I am new to PowerApps and trying to amend the Help Desk template so it connects to our on-premise exchange email server as our organisation does not have 365 email addresses. We are getting constant connection errors - can anyone help?

As far as I'm aware, on-premise Exchange isn't supported. It isn't listed in the connector reference.
You might want to consider using the SMTP or one of other mail connectors that's listed in the link above.
