I've got an issue with my connector outlook on my IOS powerapps.
For testing I used my personal outlook adress to send mails thrue my app. After testing I would like to change it to use my professional one.
I added the new one but I can't remove the old one. I can use my app and it works perfectly but when I restart powerapps. The old one (personal) is used with my app.
So my personal email address is used by default on this app and I have to change it in the detail screen of the app each time I launch powerapps.
How can I fix it?

I just tested with below steps and I cannot reproduce your issue:
1. I already have an O365 Outlook connection signed in with accountA. I open the app in my iPhone and use this accountA to login to O365 Outlook connector.
2. In PowerApps site, I add a new O365 Outlook connection signed in with accountB in the connection list here:
Wait for some time and then open the app on iPhone. Switch the login account to accountB by selecting Switch account:
After this, I send the email inside the app, the sender is accountB. I exit the app and open again, the result is the same. AccountB stays logged in.

I still have the issue, when I switch my account it works perfectly until I exit powerapps. After that the main account is the first registered. Not the last switched.
