I have a very basic app that we designed to help customers keep notes and navigate our annual event. This app does not have any connections to data outside Outlook so they can share their notes with themselves.
I created a user - "guest@domain" and am planning to have all the guests login with these credentials into the app via the web player.
Does anyone have experience with this? How many instances would I be able to run and is there a better way to do this?

From a technical point of view your workaround will work. But sharing logins (and licenses) violates your license agreement. One login = one user, not one concurrent user.
Guest access is not currently avaialbe in PowerApps. There was a preview this last month or so, but that appears to have been withdrawn. There will be new functionality coming for external guest users starting sometime after October 1. I would wait for those announcements.
This doesn't necessarily answer my question. I'm aware that the feature is in devleopment.
