Is there anyway to give users access to create item in share point list through power app but without accessing the list itself in share point?! so they cannot see or edit any entry if they tried to open share point in web or mobile?!

There are ways of tightening SharePoint permissions - Daniel Christian recently released a video on this subject.
You can also consider "hiding" the list in a sub-site and have the default view showing only irrelevant fields.
