Adding rows to a powerapp form

Festive Greetings!

Is there a way to "add a row" function in powerapps? I want a user to select data from an input, click a button and then the detail they have selected goes to a text label. They will then select another item to go to the next open label etc.

When all open labels are filled, the "Add Item" button must become "greyed out"

Or would it be to messy to add say one dropdown box for each text label to be filled? The number of items that can be added will be a fixed number - Max 20.

@WarrenBelz  I ended up learning how to use a collection rather and it solved the headache I was trying to create for myself here.
Thanks again for your help.
