Automating excel saving table

Not sure if this is possible, but How can I setup power apps so when it’s users push a button to save certain data it would automatically create their own excel 365 file to save and retrieve info from that moment on?

Quite simply, you cannot. Any Excel-based data table needs to be connected as a data source in the app setup.
