What is the difference between Canvas App and Page?
The Page option seems to be new is there any documentation available.

There is no official doc about this feature.
Base on my observation and testing, when using Page, it will help create a Canvas App as well as the above options, with the differences of resolution and fit type:
I suppose this could be used to create a desktop Canvas app.

Canvas apps and model driven apps are set to converge and to work in a more integrated fashion. What you see here appears to be an item that has been published to the solutions area in advance of the public preview, which is scheduled for release next month.
When we create a new page from a solution, the address shows 'new-model-app-page', which verifies this.
Effectively, a page is a high-level item that will appear in the left-hand navigation page. It can contain lists of data, or it can contain an embedded canvas app.

In the meantime, I would avoid using the 'new page' to create a canvas app.
