Choice Columns in JSON Output

I am converting data entered by a user in a SharePoint list to JSON and passing it to a Power Automate Flow to create a CSV file that I the user downloads.  The process works perfectly.  The issue I am having is with Choice columns.  A Choice column shows in the CSV as follows:

Single Select Choice: { "Value":"Choice Value"}
Multi Select Choice: [{ "Value":"Choice Value 1"}, {"Value":"Choice Value 2"}]

My preference would to have the columns contain a quoted list, like below.

Single Select Choice: "Choice Value"
Multi Select Choice: "Choice Value 1, Choice Value 2"

What is the best way to accomplish this?  Do this in the Power App? Do this in the flow.  The data being downloaded to the CSV is multiple records, if that matters.  There are several columns within the out put that would need to be "Cleaned" before putting in the CSV file.

Any guidance/best practices would be appreciated.

Thank you.

Steven
