Convert Date String to Value from Stored Procedure / Flow

The data source was a SQL view.  With the release of the ability to use Stored Procedures and Flow (Thank you Mr. Dang for the 'how to') I converted.  The selected gallery record is being placed in a global variable using "Set()" and is now throwing an error "Incompatible Type. We can't evaluate your formula because the context variable types are incompatible with the types of values in other places in your app".  The recordset has a few "date" & "smalldatetime" columns.  The "date" columns are coming over as a string "2014-09-19T00:00:00". 

 

The incoming data follows this path:  Search term is sent to SQL via SP, the returning recordset comes from the Flow and populates a collection and displayed in a gallery.  A gallery item is selected which populates a global variable.  This global variable is the item source for the edit form.

 

I have tried formatting the JSON data from the Flow using

I'm thinking about using UpdateIf() or Patch() to change the "date" string to value but I'm not having any luck and am not sure where in the incoming data path to make this change (flow, collection, gallery items, global variable).
 
My main objective is not to change the global variable in the edit form and the rest of the app (hundreds of locations) if I can help it.  I add this because the error persists even after changing the data source back to the SQL view.

It turns out that a SQL data type of "Date" will come through a stored procedure and Flow as a string "2019-03-17T18:03:00".  The way that I was able to work around this was using AddColumns, DeleteColumns, and RenameColumns.  I also learned that these functions will not work on an existing collection.  Here is the nested set of functions that I used to get this to work (each of these fields are of the "Date" type):
