Is it possible to create a PowerApp that acts as a middleware?
Or multiple apps that connect to their own data sources but can communicate with each other?
For example, create a PowerApp that connects to BOTH Salesforce and SAP so I can move data directly from Salesforce to SAP.

It can be easily done by adding Microsoft Flow to you app. Do you have a trial or subscription of Microsoft Flow?
About Microsoft Flow, please check this documentation for more details:

You could add the flow to your app, then when you click a button on your app, the data will be saved from one data source to another data source.

Currently, Salesforce is an available connection for PowerApps, but SAP is not available yet. I have seen an idea about connector to SAP, you could vote this idea at here:
