For table, we could take use of addcolumns, or Dropcolumns function to deal with columns:
If removing column is not what you would like to do, then please share more details here, so that I could share a more suitable suggestion.
In excel, you can freeze rows so that it acts like a header for the data below.
In Powerapps, can you freeze the first column, so when you are scrolling to the right within the data table, the first column will not move?
Did you find any solution for the Free Pane option in Powerapps data table, which is a feature available in excel.
