Building my first "real" PowerApp to a SharePoint site. My test app does not have this error, I built in a similar way from a different SharePoint site.
The error is as follows:

I figured out what was happening - there was a field that I was not using on the screen that I was submitting and it was required. It was "inherited" from the SharePoint site, so I made it not required in the SP site, and then was able to submit without the error.
