I am very new to Powerapps and am trying to develop an application.
I have a gallery which each user adds items to.
It is bound to a sharepoint list which has the gallery item and the email address of the person that added the item.
I tried filtering via email address in the default property of the gallery, but the gallery is still showing the entire list of items.
The Problem I am finding is that the gallery shows all items from the list, no matter what user is logged in. When a new user wants to add an item to the gallery, they are seeing all items from other users.
Is there any way of showing a blank gallery so that it is ready for each user to add their items?

I think what you need is to filter the gallery with created by column, right? If so, then you could set the Items property of the gallery to:
Then you could set one of the field control inside the gallery to:
You will see that in the gallery all shown items' author is the current user:
