Yes, and to do so you can always use User().Email. However, this function might lag so I suggest on the apps OnStart put this function:

Set(
  _UserEmail,
  User().Email
)

This way you replace all User().Email with _UserEmail should run a lot smoother.

So you are saying instead of typing emails of 100s of people on one cell, I should just write the variable? 

On the very cell of the email column _UserEmail will be written?

You do not need to enter people emails before hand. As they vote on different items the list will auto populate with people who already voted. At the very start of your app the whole table will be empty, since no one has voted yet.
