Hello,
I'm trying to figure out how I can change the color of a button when I hover over it without changing the color of the text.
I've played with the hover function... but whenever I use it, it only changes the color of the text. Any suggestions?

You can use a transparent button over the elements and change HoverFill property to a RGBA color with A less than 100%.
For example:
There's a lot of ideas on this forum regarding this situation, i think the dev team will keep this on radar for next milestones because these workarounds are not healthy for our apps.
