You've got the right idea here. No other way to move it into production than manually swapping out the development datasource for the production one. Expect to have to do some minor retyping of your formulas. When the development datasource is removed your PowerApp might do some odd things until you reconnect it to production.
IMPORTANT: Export your app to ZIP file so you can restore it in case something goes wrong.
