What type of control (Text Box drop down etc) allows you to search for the person?
Can you please include a full screen shot of where the person should be displayed.
So what is it that I need to do! Im pretty new to Power apps, I have the data sources connected
- office 365 users
- office 365 outlook
- A table I created in excel with the following columns

No, you will need to write something to search for the person in your data set.
The job however seems to me to be bigger than that. I had a look at the various screens and most need some type of modification to suit the individual's needs.
You might try creating some basic test apps using the standard "create from list" and see how all the controls work.
