@Chris, still looking for an update, there are lots of people impacted by this seeing as more posts are popping up (https://powerusers.microsoft.com/t5/PowerApps-Forum/Wrong-size-screen-on-iPad-Pro/m-p/48017#M20102) with the same issue and it would be extremely beneficial to know an ETA from MS on when this update is coming out.
The lack of communication from MS is getting to be a bit embarassing for you folks.
We are aiming to have a fix out by the end of this week.
This fix is now available in the Apple store (version 2.0.676). Please update your PowerApps app and let us know. Thanks!

I tried it a few times, logged off and on again, did reboots, reinstalled the app and so on. I even updated an app to 2.0.676, but still no success.

Could you confirm you are using not the iPad Pro 2 12.9" but the iPad Pro 2 10.5"? The latter has a different resolution we will fix/support in the 2.0.680 release.
