One of our clients is seeing no analytics data (in admin.powerplatform.microsoft.com) despite having multiple powerapps in active use in this environment and analytics having shown previously here for these apps .
Anyone have thoughts on why this is?

No anyone have access to see the apps' analytics.
For now, only PowerApps administrators can use the PowerApps Admin center.
What's more, the license shoule be P2.
Please check whether this user is this environment's administrator and whether his account is P2.

The user checking the analytics is licensed as P2. Oddly, he used to be able to see analytics. Apparently the charts stopped updating last month and now that more than 28 days have past, no data is showing at all.
Going into the Analytics (Preview) as the App Owner is also showing no data even though the 'Data refereshed' label shows today's date and the App is in daily use by 30+ users at the moment.
Due to upstream "Environment Provisioning" enhancements excluded some environments out of the Analytics Pipe. This issue has been fixed 10 days ago. KIndly verify once and update us your tenant information in case continue to see "No Data" issue.
