As @RandyHayes said, you don't need to switch environments on the mobile apps. I use the IOS app and can tell you from experience that the apps show up from every environment where you have access. Use the search to search for it by name if you don't see it.
I can't speak directly for the iOS app, but on the Android app all apps are listed and their environment is listed under the name of the app and the owner. So, they're all in the same list despite what environment they are in - no switching needed.
Does the iOS App not show that information?

As an IOS user I can say that you can see all apps created on different environments (where you have access). Best to select All apps on dropdown and try sorting your apps by Modified Date.

I think it's the new maker experience, or maybe I have a setting incorrect when I created the environment. I'm still not able to see the new app on my mobile. I signed in on PowerApps iOS with the same credentials as the account I gave the Plan 2 license to.
