Removing Environment Variables

I have a solution including some environment variables, Power Apps and Flows.  I have a couple EVs I want to remove from the solution.  I removed any reference to them in my Apps and Flows, and then removed them from the environment, but they still appear as selections available to use.  I removed the EV from the environment entirely, but they still appear as selections.   

 

Is there a way to prevent them from appearing?  As a follow up, is there a technique to list all of the EVs in an environment and the solutions using them?

If you remove all references to them by checking and removing the dependencies, you should be able to remove them from the environment.  In my testing they don't show up anymore after you do that.  I suspect you still haven't removed all the dependencies and then re-published the solution to all the environments.
