I have a form that has a SharePoint and SQL data source.
All the fields but 1 are SharePoint cards - however I'd like the ability for the 1 other field to query SQL, present that data to the user, then they select what they want, then that gets saved to a field on SharePoint, alongside all the other card fields.
I'm quite new to PowerApps so unsure really how to get this to work.

Would you please explain a bit more for the form control and the corresponding Data Source here?
Which data source the form control is working with, SharePoint list, or SQL Server table?
Form control is bound to a single record from the Data source, and each Datacard represents a single field, with the corresponding Input control setup with related parameter.
If here you would like to have user choose data from a different source, then the corresponding datacard need to be unlocked first, after that, modify the item/Items property with the SQL Table.
It it recommended to take a look at the following article to understand the form/DataCard first:
