Do you want to display the Display text value of the "Hyperlink" field of your SP list in a canvas app?
If you want to display the Display text value of the "Hyperlink" field of your SP list in a canvas app, I afraid that there is no way to achieve your needs in PowerApps currently.

As an alternative solution, you could consider add a Single text column (called "Description") in your SP list to store the description info about the corresponding URL Link. Then within your app, you could get the Description field value directly.
In addition, if you would like this feature to be added in PowerApps, please consider vote the following idea:

Unfortunately, the URL is all you can currently get.
There is an idea on the idea forum for this, you might want to vote on it.

Thanks everyone. I have voted for the ideas that were linked in your responses. The work around suggested by @v-xida-msft would definitely work. For my purposes I may just created several hyperlink columns in SP since there will only be 3-4 different URLs needed and then put 3-4 generic labels in PowerApps that will launch to thaose URLs.
