I'm using PowerApps to cutomize a SharePoint list, my problem is when I scroll down in the App and try to change any value it jumps back up (scrolls up). So, I can't change anything in the end of the page.

Could you please share a screenshot of the issue that you mentioned?
I have made a test on my side and don't have the issue that you mentioned.

Currently, as an alternative solution, please consider take a try to turn on/enable the Render in classic mode option within App Settings of your app (File -> App Settings -> Advanced Settings -> Render in classic mode):
Please take a try with above alternative solution, then check if if could fix your issue.

"render in classic mode" doesnt sove the problem!
MS please fix ASAP!
I've just adjusted the zoom to 100% (it was set at 80%) and It worked for me. It doesn't scroll up automatically now.
Seams like MS fixed the problem today!
Same type of ISSUE: I had the same issue with a Gallery and a Sub Gallery that would jump around in the scroll position when I tried to select values in the ListBox of each row.
FIX: Because I was just filling out a survey type gallery to be submitted/saved with a ForAll to my back end SQL database and did NOT require users to select a record in the gallery (instead all rows had to be filled/answered), I simply set the "Selectable" property of both Galleries to false and my problem went away.
