I am developing a model-driven powerapps app, I would like to have an entity that only people in a certain group in Azure AD/ Office365 can view and edit.
How would I be able to do that? Is it even possible in model-driven app?

Yes, this is done using Security Roles over Dataverse entities. You can edit an existing role, or make a custom one, and get granular about what data each role can access. A good starting point is this document
