Sharepoint choice columns are backdowns in PowerApp

Can anyone explain to me why I can't get Powerapps to simply show my choice check boxes and not default to a drop-down box?

Yes you can add your controls to achieve this. Please follow below steps:
1) Open the DataCard and from the right menu, unlock the data card to modify its properties.
2) Now, select the DataCard and remove the dropdown control and add your checkboxes.
3) Now change the OnCheck property of all the checkboxes as:
    Set(CheckedChoice, "Choice 1");Reset(Checkbox3);Reset(Checkbox4)
    Here, set the CheckedChoice variable to the value of the choice item and reset all other checkbox control. Please replace the control names according to your app specification.
    This change needs to be applied to all checkboxes.
4) Now modify the Update property as:
    LookUp(<<SP List Name>>,<<Choice Column Name>>.Value = CheckedChoice).<<Choice Column Name >>
