I assume that you are using Modern SharePoint view. If yes, please try to change the Label to HTML text on your app. Then the text will be displayed properly.
You could also consider to use Basic SharePoint view. In basic view, configure the Text field as “Enhanced rich text”, then create an app based on the list, the rick text will be also displayed properly without changing the label to HTML text.
Please try it on your side. Hope this works for you.

I had once the same problem, just put the text in "Plain text" and it will work fine!
@Fieldssuggestion is solving the problem by deleting all html tags and showing only text.
I see it as a bugg from Microsoft, not handling fields in the correct way. If you have a rich text-field in Sharepoint, why doesn't the PowerApp builder sense that, and create a field that is able to correctly render rich text or HTML?
Maybe I am being stupid, but I simply cannot see how to change my Address field, which has come up as plain text, to HTML
How do you do this? I don't see the option 😞
