• Add checkbox to the gallery
• Set the Default Property of the checkbox
• In this example, Check when Priority is 'Critical"
• Change based on your needs

Even we can change the display mode whether the user is allowed to update or not.

Checkbox DisplayMode: If(ThisItem.Priority.Value="Critical",DisplayMode.Disabled, DisplayMode.Edit)
