i want to create an app connected to a sharepoint list
I can't be able to do exactly what i want...
I'm following some tutos from Pragmatic Works & Shane Young but i still blocked ...

I can not conceive of an administrator mode.
Just for a beginning app like sharpeoint list with two simple screens & 2 buttons no problems but now ... it's too difficult.

Could you please share a bit more about your scenario?
What do you want to achieve within a canvas app? Where are you locked?
Based on the needs that you mentioned, I think you need to custom a canvas app using PowerApps. On your side, you could create one separated screen for each requirement you listed.
I suppose that you are licked within the 2nd, 3rd and 4th point. For 2nd, I think the Edit form could achieve your needs. Currently, there is no direct way to submit a Signature to a SP List directly. As an alternative solution, you could consider submit the Signature into a SP Library, and save the URL link to saved Signature into your SP list.

For the 3rd point and 4th point, if you want to list events you created in your SP list, in your app, or list the admins, I think the Gallery control could achieve your needs. Please check the follownig video for more details:

An employee will be able to :
- create an event (date, name, location ...)
- consult a list of events
- consult details of these events
For this part, no problems with a sharpeoint list
- welcome screen
- event screen add
- event screen consult
- event details screen
- dashboard screen
An admin wich is an employee + a super user: [4/5 admins with the same rigths)
- all like an "employee"
- 1 admin have a location with a group of employees and 1 director
- an access "admin" with a new tab/button
- modify a list of events
- access to a leaderboard (dashboard -> group by type event / countrows ...)

Sure, there doesn't seem to be any difficult things involved.
If you are using PowerApp notifications, keep in mind that the users then need a "premium" license (though I'm not sure, if every user of the app or only the ones who receive a notification. I'd guess every user...)
Then you have to consider how to identify your admins. This can be based on hardwritten mail address in you app (not the best option though....), a SharePoint list, the AD information, security groups, Micrsoft Groups, ...

Could you please share a bit more the "Roles" that you mentioned?
Do you want to configure the Role permission within a canvas app?
For 5 screens point, you could custom screens within your app to meet your needs. Please check and see if the following video would help in your scenario:
For your Roles point, if you want to configure your Role permission wihtin a canvas app, I afraid that there is no way to achieve your needs in PowerApps currently.
As an alternative solution, you could consider save the email address of specific users into specific collection. E.G. User A and User B are both Admin, you could consider save the email address of User A and User B into a Collection (AdminCollection). Set the OnStart proeprty of the App control to following:
then you could control a control visibility based on whether or not the current user is admin. Set the Visible property of a specific control (which only admin could access) to following:
If( User().Email in AdminCollection, /* <-- Check if the current sign in user is a admin */ true, false )

On a sharpeoint list it's able ta add a column wich have L/l position on atributes
