I see sending emails from Dynamics 365 app is not possible.
is there a workaround, perhaps sending emails from Outlook and tagging them in someway to be registered in Common Data Service/Model Driven App. This is without using Outlook for Dynamics App which I am guessing requires licences.

Do you want to send email in dynamics 365 app?
I'm afraid it's not supported now.
If you want to send email in an app, you need to connect this app with office365 outlook.
However, dynamic 365 could only connect with CDS currently.
Other connectors are not supported.
Also, if you could call flow in your dynamics app, you could also send email. (Create a flow to send email).
However, I've heard that the "When an item is selected in CDS" trigger is still in test process.
So I believe you could make this in the future.
Here's the issue about this:
@ghdunn - The Dynamics 365 App for Outlook does not require a license other than the Dynamics 365 license. You will need to configure the Email Configuration first and then deploy the app to the users. Once this is done, it's deployed to three "locations". One is to the Outlook Client on the desktop, the other is to Outlook Online, and, lastly, to the Outlook Mobile App.

When I asked about licence I was actually referring to Dynamics 365 licenses, not Outlook App for Dynamics 365.
I am building a Model Driven App with a Power Apps license, and accessing that through the Dynamics 365 Mobile App, which I hope is all covered by my Power App Single App license, without needing a Dynamics 365 license at all. At 7.50/user/month rather than 50/user/month it is a very significant difference.
Further experimentation suggests I can indeed send an email from Dynamics 365 app....the problem is that it doesn't log it in the Model Driven App activity log, in the way that a phone call is logged, or in the way that an email is logged when I send it from my Model Driven App on the desk-top.
I think this is now my follow on question, but it is very precise about a MDA using 'Activity' entity rather than Dynamics 365 App:
if i use the Dynamics 365 mobile app to access a Model Driven App in Power Apps, is there a way to log the sending of an email as an 'Activity'?
