Please edit the Security role, and select Custom Entities tab.
Select the Entity "Daily Occupancy" and add organizational privilege's to all the options except Delete.

I'm trying to figure out what the "employee visits" in the facilities management app does and how it works. Attestations seem fine, we're seeing bookings, but I'm not seeing any linkage between booking and visits. Is there documentation somewhere that I missed?
Employee Bookings - Keeps track of the employee's area, start (arrival) time, and end (departure) time. Employee bookings are linked to the employees' attestation record and are updated with actual employee visits.
Employee Visits - Keeps track of visits to the facility. Employee visits are linked to an employee and a booking record.

The visit entity is a placeholder in the data model for integration with external building entry systems or checkpoint scanning systems. Visits provide confirmation of building ingress. Visits can also be used to reconcile if employees are effectively attesting and acquiring day passes prior to entering a building. We intend to make use of this in further in future updates.

New question - in the workplace care management app, the "Employee Instructions" section contains a "check in available" toggle, but it does not seem to actually prevent the user from checking in. Is that also a placeholder?

Yes that is a place holder in Release 1.1, that feature will be completed and working on Release 1.2.

Are there any plans to make use the of the "case manager" role as an actual security role? If I understand correctly, anyone designated as a case manager can see all cases, not just the ones assigned to them. I looked for a role in the Security settings to use to restrict that to their cases only, but there does not seem to be one.
You can modify the Security Role "Return to Workplace - Health and Safety Leaders" and update the privilege's for the Case Contact entity in the Custom Entities Tab.
To accommodate to see and update only the cases that user created, you will need to modify the Create and Write to a User only privilege's', like the following image... Green means Organizational (All) records

@AbrahamSaldana changing that permission did not seem to change the access to the records. Even when I set view to own records, I can still see cases created by other uses when I switch to the "active cases" view. My account had the "health and safety manager" role. What we would like to have is:
What seems to be missing is a way to manage the case managers, there's not an "add" option in the case managers page.
To add on the comment from @AbrahamSaldana, you also need to change it from organizational to user from the entities: employee case and case facility. What I would advise, since you want to separate them, open the Health and Safety leader role and press More Options and then Copy Role, this way you can save an exact copy of the role. (link) You can then adjust that copy, and assign this to case managers and leave the other one for Health and Safety leaders.
As for the case managers, the list of case managers shown is exactly based on the system users. Currently the view isn't in there for all active users, so you need to change that via users under security in the settings, but let me see if we can improve this experience. @birdman
