Custom SharePoint list form, Person field not displaying values in people picker

I have a set of screens in PowerApps, the first of which is my custom form for users to enter information for new items in a SharePoint list.  That list has a lookup column and two people picker columns (submitted by as a user defined field and manager).  On a second screen, I added a form control that points to the list with New as the mode.

For all of the fields on the form save those three, I have been able to set the default value to eitther the label value (calcuated items, e.g.) or the entered value for text input fields.  I have been unable to get a default value on the lookup or people picker fields.

For submitted by, I used
{
  '@odata.type':"#Microsoft.Azure.Connectors.SharePoint.SPListExpandedUser",
   Claims:Concatenate("i:0#.f|membership|",User().Email),
   DisplayName:User().FullName,
   Email:User().Email
}

I tried this for first the entire card, then the card value default and then for the default selected items.  No combination I could find caused the value to be displayed (assuming it is the logged on user).   for the manager field,

{
  '@odata.type':"#Microsoft.Azure.Connectors.SharePoint.SPListExpandedUser",
   Claims:Concatenate("i:0#.f|membership|",Office365Users.Manager(User().Email).Mail),
   DisplayNameOffice365Users.Manager(User().Email).DisplayName,
   EmailOffice365Users.Manager(User().Email).Mail
}

I have a workaround on the lookup field (created a hidden gallery that filters to one item).  I would really appreciate anyone's help on this.
