Could you share the configuration in your Approval Details?
I did a test on my side, using a simple Markdown, the tables in the body of the message displayed on the web page and the client are normal.

My markdown is working as it is showing correctly in both the web and client views (See screenshots in original post). It is not working in the email or Flow plugin in Outlook.
Is my understanding wrong? My first screenshot is a screenshot of the inside of the Outlook email body.
You're not understanding it wrong, my first two screenshots from my original post are also from Outlook, the first one is from the Flow plugin in Outlook and the second one is from the original Outlook email and show the markdown not rendering correctly in the email.
The last screenshot is from the Flow web page that shows that the markdown is correct.
Can you share a screenshot of your test?

Please note that this is rendering correctly in the web and mobile client, but not email. I have checked an approval from the 25th October and this wasn't rendering markdown in the Flow plugin for Outlook, but was in the original message.

As of March 2019 this is still a problem. Table markdown is not rendering properly in emails; it only shows correctly in the mobile app. **Bold** _italic_ and other markdown appear to work everywhere. It's just the |table| pipe characters that are ignored and render as is.
Came to ask the same question... Anyone have info on a fix? Trying to get everyone to buy-in on using Approvals but list data is a major usage and this issue just makes them want to stear away from MS things in general.
The Aprroval action is great however formatting is a joke within these actions. We are struggling to get basic formatting to work properly within the approval action using markdown. Seems to work okay on outlook online and mobile client however Oulook full client very little of the formatting is working for us.
